Im Jahr 2006 wurde dieser Traum wahr und er baute das 450 Jahre alte Bergbauernhaus, das seit mehreren Generationen seiner Familie geh\u00f6rt, in ein Hotel um. Zuerst absolvierte er eine Lehre im Suvretta House St. Moritz und lernte dann bei den besten K\u00f6chen: Bei Philippe Rochat in Crissier, bei Daniel Bumann in La Punt und bei Harald Wohlfahrt in der Traube Tonbach in Deutschland. In Miami Beach verbesserte Cadonau sein Englisch und absolvierte schliesslich die Hotelfachschule in Z\u00fcrich.<\/p>\n<p>Seit 2006 ist Dario Besitzer des kleinsten 5-Sterne-Hotels der Schweiz, er ist Ehemann und stolzer Vater von zwei Kindern.<\/p>\n<p>Das IN LAIN Hotel Cadonau umgibt eine wunderbare, gem\u00fctliche Atmosph\u00e4re, in der die Natur im Mittelpunkt steht und wo Darios Botschafter der B\u00fcndner K\u00fcche und l\u00e4sst sich gerne von der Natur inspirieren. Er arbeitet haupts\u00e4chlich mit lokalen und saisonalen Produkten aus dem Engadin und kennt bei seiner Kreativit\u00e4t keine Grenzen. In seinem Hotel wird alles selbst gemacht, vom Brot bis zur Schokolade und die Kr\u00e4uter kommen frisch aus seinem Garten. Chef Cadonau stellt auch seinen eigenen traditionellen Alpk\u00e4se her, der von der Rohmilch der K\u00fche des Tals kommt und er verfeinert seine Kreationen dank viel Phantasie mit Ingredienzen, wie Safran, Tr\u00fcffel oder Heublumen.<\/p>\n<p>Sein Unternehmergeist, seine Geselligkeit, seine Begeisterung f\u00fcr eine gepflegte Tischkultur, seine Vorliebe f\u00fcr gute, lokale K\u00fcche und sein \u00f6kologischer Sinn haben Dario Cadonau dazu bewogen, sich dem Haus Veuve Clicquot als Botschafter der Gartengastronomie anzuschliessen:<\/p>\n<p>&#8222;F\u00fcr mich war es wichtig, mich mit dem Produkt und der Marke identifizieren zu k\u00f6nnen.\u00a0Mit Veuve Clicquot habe ich viele Gemeinsamkeiten gefunden.\u00a0Vor allem bei Madame Clicquot, der Erfinderin der \u201epupitre de remuage\u201c und dem Ros\u00e9-Champagner \u2013 sie war eine Pionierin der Branche.\u00a0Historisch gesehen gibt es einige Parallelen zwischen dem franz\u00f6sischen Haus und unserem IN LAIN in der Schweiz, denn wir beide haben an einem sehr abgelegenen Ort etwas gebaut, das funktioniert und erfolgreich ist.\u00a0Wir m\u00fcssen kreative Wege finden, um Verbraucher oder G\u00e4ste f\u00fcr unsere Produkte und Dienstleistungen zu gewinnen.\u00a0Bei Madame Clicquot war es genauso.\u00a0Deshalb haben wir uns gefunden und im Dezember 2020 angefangen zusammen zu arbeiten.
