Dies gilt insbesondere f\u00fcr Dr. Bill Lumsden, der sich bei jedem Whisky zun\u00e4chst fragt: \u00abWas w\u00e4re, wenn &#8230;?\u00bb<\/p>\n<p>Ein Ansatz, f\u00fcr den er allseits bekannt ist. Als Dr. Lumsden vor einigen Jahren von einem Whisky tr\u00e4umte, der die wundervollen Eindr\u00fccke eines Waldspaziergangs einfangen k\u00f6nnte, erinnerte er sich daran, wie die Whiskyhersteller der Highlands in fr\u00fcheren Zeiten ihre Gerste mit allen nur erdenklichen Arten von Brennmaterial aus dem Wald trockneten.<\/p>\n<p>So fing er an, mit verschiedenen Waldpflanzen zu experimentieren, die er zum Darren der Gerste benutzte. Die Wahl fiel schliesslich auf Wacholderbeeren, Birkenrinde und Heidebl\u00fcten, vermischt mit ein wenig Torf. Sei es der Duft des Regens der letzten Nacht oder das Rascheln der Bl\u00e4tter. Ich fing an mir vorzustellen, wie man die Eindr\u00fccke des Waldes in einem Whisky zum Leben erwecken k\u00f6nnte.<\/p>\n<p>In der Art, wie es schon unsere Vorfahren getan haben, die zum Darren der Gerste das benutzten, was sie in den W\u00e4ldern fanden. Nach vielen Versuchen haben wir uns f\u00fcr Wacholder, Birkenrinde und Heidekraut entschieden, die auch schon bei den traditionellen Darrverfahren zum Einsatz kamen.
