Apr\u00e8s trois ann\u00e9es de m\u00e9decine \u00e0 Trujillo au P\u00e9rou, Daniel Galvez Estrada a troqu\u00e9 ses scalpels par des couteaux de cuisine et s\u2019est consacr\u00e9 \u00e0 sa vraie passion, la cuisine. Apr\u00e8s avoir obtenu son dipl\u00f4me de Gastronomie et des Arts Culinaires en 2012 \u00e0 l\u2019\u00e9cole de Gast\u00f3n Acurio, Le Cordon Bleu, le jeune chef a fait ses armes dans de nombreux restaurants au P\u00e9rou et aux Etats-Unis.<\/p>\n

En 2014, il rejoint la brigade de Gast\u00f3n Acurio, dans son restaurant Astrid & Gast\u00f3n \u00e0 Lima. Daniel Galvez Estrada a su vite acqu\u00e9rir la confiance d\u2019Acurio qui le pla\u00e7a en 2020 en tant que sous-chef au restaurant Manko \u00e0 Paris avant de rejoindre le Yakumanka Gen\u00e8ve comme nouveau chef.<\/p>\n

Anim\u00e9 par la passion de la cuisine, de ses racines et du partage, le chef nous raconte sa fa\u00e7on de voir la cuisine\u00a0p\u00e9ruvienne et sa nouvelle exp\u00e9rience Genevoise : \u00ab\u00a0Ce dont je m\u2019inspire pour cr\u00e9er mes plats, ce sont mes exp\u00e9riences d’enfance.<\/p>\n

Apr\u00e8s avoir v\u00e9cu dans 3 villes diff\u00e9rentes au P\u00e9rou, j’ai pu d\u00e9couvrir des cultures diff\u00e9rentes, \u00e0 travers des manifestations, et divers march\u00e9s typiques de la vraie gastronomie d’une ville. Je puise aussi dans les exp\u00e9riences de chaque membre de mon \u00e9quipe, elles sont une partie tr\u00e8s importante de chaque menu.<\/p>\n

Pour moi, l’essentiel d’un restaurant est de faire na\u00eetre des \u00e9motions et des histoires, et bien s\u00fbr de les transmettre aux clients, pour qu’ils puissent ressentir les sentiments que nous cr\u00e9ons dans nos plats\u00a0\u00bb.<\/p>\n

Yakumanka est une cebicheria (restaurant sp\u00e9cialis\u00e9 en ceviches) authentique et pr\u00e9sente la cuisine p\u00e9ruvienne du renomm\u00e9 chef Acurio dans un d\u00e9cor moderne et attrayant. Le d\u00e9cor est \u00e0 la\u00a0fois convivial et chaleureux, aux notes marines du designer Morandi Arcela.<\/p>\n

Un bar \u00e0 ceviche tr\u00f4ne dans la salle du restaurant, afin que les clients puissent observer les chefs pr\u00e9parer leurs cebiche et tiradito. Le bar \u00e0 cocktails propose une s\u00e9lection de cr\u00e9ations \u00e0 base de Pisco, la fameuse eau-de-vie de vin du P\u00e9rou.<\/p>\n

La v\u00e9randa offre \u00e0 ceux d\u00e9sireux de profiter de la relaxante vue sur le Rh\u00f4ne, la possibilit\u00e9 de s\u2019\u00e9vader au c\u0153ur d\u2019une authentique cebicheria p\u00e9ruvienne.<\/p>\n

N\u00e9 \u00e0 Lima en 1967, Gast\u00f3n Acurio est chef cuisinier, auteur, homme d\u2019affaires et ambassadeur mondial de la gastronomie p\u00e9ruvienne. En 2013, leur restaurant a \u00e9t\u00e9 \u00e9lu le Meilleur Restaurant d\u2019Am\u00e9rique Latine par les 50 Best Restaurants. Le chef est aujourd\u2019hui \u00e0 la t\u00eate de plus d\u2019une quarantaine de restaurants proposant diverses exp\u00e9riences gastronomiques.<\/p>\n

En 2018, Acurio remporte le Prix Diners Club Lifetime Achievement d\u00e9cern\u00e9 par les World\u2019s 50 Best Restaurants, r\u00e9compensant son parcours professionnel et sa contribution dans la cuisine mondiale. La relation entre le chef et le groupe Mandarin Oriental a d\u00e9marr\u00e9 en 2014 avec le restaurant La Mar by Gast\u00f3n Acurio au Mandarin Oriental, Miami.<\/p>\n
